Easy Chipotle Chicken Salad

Hello friends!!   Today I have a quickie salad for you that I just made myself for dinner.   Hope you enjoy it!

Ingredients:
  • Salad
  • 1 - 2 TbspShredded lowfat cheddar cheese
  • dash of Red pepper
  • 1-2 Tbsp sliced almonds
  • 3-5 shredded or sliced baby carrots
  • 2 Slices of chicken, torn (I used chipotle chicken)
  • Chipotle ranch dressing

Directions
1. Mix ingredients together. 
2. Serve.

Happy Colombian Independence Day!!

Today, July 20, is Colombian Independence Day!  Back when I lived in Queens, I used to celebrate this like crazy...the parade in Jackson Heights, the Colombian festival in Flushing, not to mention all of the places that have events going on at night (in case you didn't know my mother is Colombian.    Colombian mom + Colombian neighborhood = tons of Colombian pride)   (Note: In case you want to find out some facts about Colombia, I spotted this post on City Girl to Country Girl with a list of facts about Colombia, some of which I didn't even know)

Unfortunately, there is no longer a Colombian festival in Flushing though I did find this information about the parade and festival on Aleida.net

 Jackson Heights, Queens. Tentative route and times: Parade 11:00am-3:00pm, Northern Boulevard from 69th Street to 90th Street. Festival off Northern Boulevard, 3:00pm-7:00pm. Info: 1-212-243-1177, cesar@galoscorp.com.  There are a bunch of other events posted but I've never been to any of them.

This year there are ton of Colombian Independence Day events.  One that caught my attention (since it's been mentioned a million times on Spanish radio) is the Colombian Independence Day Concert tonight at the Prudential Center in Newark, NJ featuring Carlos Vives, Silvestre Dalgond, and Jorge Celedon...

Want to celebrate Colombian Independence but don't live in the area?  Or live in the area but can't make it to the concert?  Don't worry neither I can't make it either.  However, one way that Colombian people love to celebrate everything is through food!  (That and/or Aguardiente)

Want to try something new?  Maybe try making yuca frita.  Definitely cut your yuca a bit thinner if you want them to be on the crispier side.

Don't feel like cooking?   Don't worry I have a couple of suggestions for restaurants too. 

In Brooklyn, I love Bogota Bistro.   I recommend the bandeja paisa.   Yes, it's tons of food, but Colombian Independence Day only comes around once a year and you can always come back to the blog for some healthy recipes.  In Jackson Heights, I've always liked Cositas Ricas best. That said, if it's too packed, you can always keep walking around and you'll be sure to find lots of other Colombian restaurants.  I also recommend Pollos a la Brasa Mario. There are multiple locations.

Beet Berry Smoothie: Guest Post on Seduction in the Kitchen

Greetings friends!!  Today I am posting for Deanna of Seduction in the Kitchen.   One thing that I love about the blog is that Deanna recognizes the important role of food in our lives.   So when Deanna said she needed guest posters while she was away, I volunteered.

Recipe Roundup: Fun Summer Recipes

Good evening Readers!   I just came back from a 5k and feel really good about doing it even though everyone thought I was crazy for running in this heat.  There were like a million other things that I could have been doing that would have been nice and cool.  There was free fro-yo at the end though so that made it all worth it.

Anyway, between the race and my dishwasher breaking down yesterday, I haven't had the time to cook anything up for the blog.

Ayza Wine and Chocolate Bar: A Review

Greetings Readers!!  It's another Tasty Tuesday...you know what that means...a new post!

As you may know by now, I love good chocolate.   So I want to introduce you to a place in the city that I just love... Ayza Wine and Chocolate Bar in Midtown (I haven't been to the one in West Village).  I always enjoy it...the place has everything...wine, chocolate, martinis, cheese, coldcuts, appetizers....inside seating as well as outdoor seating.  They have special promotions on Sunday nights (couples night out) and Tuesday nights (girls night out), as well as a jazz night on Mondays.  It's a bit pricey, especially for a chocolate martini but the chocolate martini does come with a delicious truffle.

Almond Martini and Truffle anyone?  Be aware that it is a bit strong... truffle was excellent.

Or perhaps a choice of 5 cheeses or meat?  We chose Manchego, Blue Cheese, Gorgonzola, Brie and Sopressata.   It came with bread but we did have to request some extra.

So now that I've told you about the drinks, cheese, chocolate...let's discuss the interior.   I just love the atmosphere at this place.  It's all very intimate and very chic.

Think your spouse or significant other might want appetizers or even beer?  Don't worry - they certainly have other food (try the grilled baby shrimp) and even have three or four beer choices (including Corona and Blue Moon I think).  However, in my humble opinion, the drinks, chocolate/dessert, and cheese are where it's at ...

Happy 4th of July!!


  
Helllllllllo Readers!!    Happy 4th of July!!    Wishing you a safe and wonderful holiday.  What are you doing to celebrate?  Today I am going to a poolside BBQ.  Fortunately, I already caught a great firework display so not sure if I will be going to see fireworks (if anything there's always the ones on TV).   Are you cooking up anything special? 



Note: After seeing tons of interesting recipes on pinterest, the final straw for me was when i saw this recipe on Chocolate Moosey's blog.  I started getting major blog envy!

So I immediately went looking for sprinkles.  My journey took me far and wide but led to the sprinkles pictured below.  I then made Oreo truffles (the ones I made for Father's Day/Surprise Recipe Swap) but added a little patriotic flair.
