Hello readers! Let me introduce you to my breakfast - pumpkin quinoa smoothie.
I decided to make this smoothie because after eating a delicious croissant yesterday and picking up an Irish coffee, one of my co-workers suggested that I buy an Irish creme donut. Then, there was a long discussion of donuts, including the pumpkin donut. It got me in the mood for pumpkin.
Then, on Saturday, while I was looking for tomato paste for my chicken parm, I came across the quinoa and the pumpkin puree. I also had almond milk that I purchased for another recipe. So I found some ingredients that satisfied my would likely satisfy my pumpkin craving. Thus, the pumpkin quinoa smoothie was born.
This smoothie has kind of a nutty flavor and a thick consistency. It is very filling and also healthy, as it contains quinoa which is known as a superfood due to its many health benefits. Hope you enjoy this recipe =)
