Pumpkin Quinoa Smoothie

Hello readers!   Let me introduce you to my breakfast - pumpkin quinoa smoothie.

I decided to make this smoothie because after eating a delicious croissant yesterday and picking up an Irish coffee, one of my co-workers suggested that I buy an Irish creme donut. Then, there was a long discussion of donuts, including the pumpkin donut. It got me in the mood for pumpkin.

Then, on Saturday, while I was looking for tomato paste for my chicken parm, I came across the quinoa and the pumpkin puree. I also had almond milk that I purchased for another recipe.  So I found some ingredients that satisfied my would likely satisfy my pumpkin craving. Thus, the pumpkin quinoa smoothie was born.

This smoothie has kind of a nutty flavor and a thick consistency. It is very filling and also healthy, as it contains quinoa which is known as a superfood due to its many health benefits. See also Quinoa Superfood  Also, banana has been recommended as a good post-jogging/workout food(due to its carb, protein, and potassium content) so this meal is especially good for after a jog or run.   • 1/2 cup quinoa, cooked
  • 1/2 cup pumpkin puree
  • 1/2 a ripe banana
  • 1 1/2 cups almond milk (other types of milk can be substituted)
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 Tbsp honey (or more to taste)


1) Wash quinoa (check your package to see if this step is necessary) and cook quinoa according to package directions, if you haven't already (I usually make mine in the rice cooker but you can also make on the stovetop)

2) Place all of the ingredients in the blender and blend until smooth.
3) Enjoy!

Yield: two servings


  1. I've made pumpkin pie quinoa, but haven't thought about using it in a smoothie! I'll have to try that now that the weather is (hopefully) warming up!

    1. Pumpkin quinoa sounds amazing! It's definitely up my alley- and conveniently probably uses a lot of similar ingredients to those in my smoothie.

  2. An interesting to put quinoa in a smoothie! And good for using up leftover quinoa. (A problem I have whenever I cook quinoa =))
