Greetings readers! I have a great new recipe for you! It's healthy and will keep you feeling energized and involves more kale.
In the interests of eating healthier, you've probably noticed I've been incorporating more kale into my diet. It should noted that my enthusiasm for kale was further invigorated when I watched a particularly good episode of SNL which contained a skit where Justin Timberlake, dressed up as a piece of tofu, who was trying to attract customers to a vegan shop, sings about kale.

This recipe tastes good and kept me energized. The consistency is a bit thick and a little unusual (might be due to the kale though).
Green Smoothie (adapted from guest post by Prevention RD on Food Done Light, originally seen on Happy Hearted Kitchen)
- 1 ripe mango, cubed
- 1 1/2 cups of unsweetened almond milk
- handful of spinach
- 1/5 cup of kale, cleaned with veins removed
- 1/2 Tbsp of honey
- optional: save a mango slice as a garnish
1. Place the ingredients in blender.
2. Blend/liquify the ingredients to desired consistency (add more milk if needed)
Yield: 1-2 smoothies (I say one to two because I was able to save about a half a large glass as part of my breakfast for the next day but it could also be one large smoothie).
