Healthy Veggie Fried Rice




After participating in the potato recipe swap, I became interested in doing another.  Recently, I began hearing that people loved the SRC-style (now Blogger's Choice) recipe swaps; I  learned that bloggers are randomly assigned each others' blogs and can choose any recipe contained therein to cook and post.  I volunteered to participate but learned to my chagrin that I didn't have enough recipes (50 were required; the official SRC requires 100).  Nevertheless, I was still able to do a swap.  Here's how.

Turkey Pizza Burgers


Ever since the day I saw this recipe posted on Prevention RD (also seen on Edible Mosaic), I wanted to make my own healthy and delicious pizza burgers...and I did.  These came out so well that my husband aka Mr. Delish said he can't wait to eat one again, which is good because there are leftovers.

With these burgers, I totally redeemed myself from my first culinary dinner disaster which occurred this week, which I shall dub the Salmon Patty and Potato Fiasco of April 2012.  Mr. Delish suggested "Salmonacolypse."

Dulce de Leche: Cooked In the Microwave?!



My abuelita (may she rest in peace) always used to make dulce de leche when I was little.  Even though she was diabetic, she always made dulces (tomato, coconut, pineapple too) so she could offer it to visiting relatives or guests.  So dulce de leche makes me think of her.

Anyway, I've always loved condensed milk (or leche condensada) which tastes great when you put a bit in coffee, on toast, or when cooking.  What I didn't realize was that dulce de leche is, in a nutshell, cooked condensed milk, and that I could make it in the microwave.

Gnocchi with Balsamic Brown Butter


In February,   I posted on a couple of boards that I was looking for new sauces for my heart-shaped ravioli for Valentine's Day.  I received some responses and this sauce seemed particularly intriguing.  However, I wound up using a red sauce since I thought it was more Valentine-y.  Anyway, fast forward to now, when I decided I wanted to try something a little different with some gnocchi I had in my cabinet.  I basically followed this recipe from Giada de Laurentis of the Food Network, with two notable exceptions.

Sauteed Filet Mignon in Garlic Butter Wine Sauce

I recently made sauteed filet mignon with corn and roasted zucchini as sides, although I frequently will pair this entree with potatoes/fries or coconut rice as my carb and broccoli, asparagus or some type of salad as my green vegetable.

This particular method of making steak is my husband's favorite.  I typically make this recipe every week or two and it always hits the spot.  I've basically slightly adapted this recipe from cooks.com, but kept increased the amount of garlic and used butter needed for two steaks).

Rice Cooker Coconut Rice

Every Thanksgiving my mom spends hours making a delicious Colombian coconut rice which  uses real coconuts.  This is not that recipe, which is so time-consuming my family only eats it once a year. I found this simple recipe   from about.com Thai food so it's obviously different from Colombian rice, but I have added information below on how to adapt this recipe and make it more like Colombian rice, without spending hours and hours in the kitchen.

I have made this recipe a bunch of times since it's a favorite at Casa Delish but never posted it since it's a recipe I've been making since last year before I started my blog.  Last night I made it with scallops in an orange mustard sauce as my entree accompanied by a salad.

Easter: Orange Cookies (Ninjas and Flowers)




This year I decided to bake springtime cookies for Easter, even though I usually bake mostly in fall and winter weather.   I adapted a recipe of orange-flavored cookies from Taste of Home Black-Eyed Susan Cookies.

These cookies had just the right amount of orange flavor and were sweet but not overly sweet. I'm thinking I could try these with vanilla or almond extract instead of the orange.
