Stuffed Basa: Prepared Deliciously!

For avid readers of my blog, you may know that my mom's instructions to prepare my fish "deliciously" are the namesake of my blog.  Last Saturday my mom finally gave me some direction re: preparing white fish deliciously!  Not only that but tonight my mom and I, in different cities and different states, completely unplanned, made the same exact entree at the same time.

Parmesan-Crusted Tilapia

The tilapia was photographed right out of the oven.

A couple of weeks ago my husband I went grocery shopping.  He's always been equivocal about disliking salmon but liking other types of white fish.  So I bought tilapia, which was on sale...and then he told me that he doesn't really like tilapia.  Since we are newlyweds, we are still learning new things about each other.  Despite his comment, I  immediately became determined to change his mind about the tilapia.

Buffalo Chicken Salad

This recipe was inspired by/semi-adapted from Prevention RD's recipe for buffalo chicken tacos found here, originally loosely adapted from How Sweet It Is  I love reading Nicole's blog because I know her recipes are healthy and nutritious and I've been dying to make those tacos.  However, since my husband bought a nonfat blue cheese dressing, I decided to use that instead this time and make tacos later.  My husband loves this recipe and asks me to make it every week or two.

Ninjabread Men Cookie Cutters: Consider my mind officially blown

So today I considered it amazing that I found heart shaped raviolis at Vitos and also sponge bob mac and cheese at the grocery store. Then I made plans with my amazing friend Cheryl whose blog Food Judicata inspired me to start my own blog. We watched Linsanity, did some shopping, then exchanged (late) Christmas presents. She gave me the cake pops that I always wanted (pictured in previous post)

She also gave me possibly the awesomest thing I've ever seen in my life....Ninjabread men cookie cutters!!

Tell the truth, how much do you want a Ninjabread man RIGHT now?

I am so making these for our belated Valentine's Day Dinner - easy, romantic and delicious!

(I also bought a small box of sponge bob mac and cheese for our pantry so I won't feel sad when I've eaten these).

Sauteed Zucchini with Garlic

Today I had some rice and a piece of avocado with my dinner since I had a big lunch (thanks to Pret a Manger who gave me a free dessert).  I felt like something was missing.  A quick look in the fridge revealed that I really need to go grocery shopping...and that I still had a zucchini left to use.  So I decided to make this quick and easy sauteed zucchini.

Brown Sugar Glazed or Herb Glazed Carrots

Okay, this recipe from a BHG cookbook is the last of my veggie side dish solutions...for now.  I just really like finding delicious and healthy side dishes.  Personally, I prefer the brown sugar glazed recipe (pictured) but the other one is good too for variety.  This recipe is so easy ...especially if you have baby carrots already in your fridge.  Bon appetit!

Zucchini Pancakes: Yum!

I love potato pancakes.  I've also discovered that I love these  zucchini pancakes, which I do not serve with sour cream or yogurt because they are delicious as is! I found the recipe through my friend's blog, Food Judicata.
She found it on Simply Recipes, where it had been adapted from a recipe she found in Everyday Food magazine.

Baked/Roasted Zucchini

I love quick and easy vegetable side dishes, especially when I don't feel like cooking.   And so I am linking to a favorite baked zucchini recipe from here. Just pop these little guys in the oven and wait for them to cook while you're making the rest of your meal.  I used an upscale Parm from Garden of Eden and was not disappointed.  Please be advised that sometimes these zucchini come out crispier than they did in the picture.

Broccoli Rabe

Recently I tried making broccoli rabe for the first time.  It came out really well.  I adapted this recipe from allrecipes, which yields four (4) servings.  I boiled the broccoli rabe first which I believe did eliminate most of the bitterness. It sounds fancy but it's actually fairly easy.  Also, for a little spice, you can add red pepper to this dish.

Pumpkin bread and muffins....oh yeah!

Even though it's almost spring, I still love and miss all things pumpkin.  While I was thinking about recipes I might post here I thought I'd add this pumpkin bread recipe from allrecipes.  Try it...might change your life.  I made a loaf and pumpkin muffins out of it since I did not have another loaf pan (I got this one at a bridal registry event I went to with my sister-in-law on a day we won so many items the other registrants started thinking it was rigged...nope just lucky).   The best thing about making this was that it cemented my belief that I am an excellent baker; that and this is an excellent recipe.
