Mom's Potato Zuchini Pancake Recipe
Stay tuned for my mom's potato zuchini pancake recipe - a less starchy alternative to the traditional potato pancake, which is posted below.
1 small onion
1 Tbsp flour or pancake mix
1. Grate zucchini, potato and onion.
2. Add flour and egg to the mixture (in small bowl).
3. Pour in the shape of small circles into a skillet, greased with EVOO.
4. After a couple of minutes when you think it has browned on one side, flip it over and cook a couple of minutes on the other side.
5. Serve and enjoy!
Serves: 2 or 3 as a side dish
