Defrosting Our Wedding Cake


Mr. Delish and I recently celebrated our one year wedding anniversary.  I was super-happy to get our cake out of the freezer but dubious about how it would taste.  Not to worry; it tasted great!   And here's what I did...
I must thank the good people of our wedding hall who gave us our cake and covered it with a bunch of tin foil.  I stuck it in the back of our freezer until the day before our wedding when I put it in the fridge to defrost.  Then, just about an hour before I wanted to eat it, I left it out at room temperature.  It was so good.  It was almost as good as it was on our wedding day.

Not to toot my own horn ::toot toot:: but my husband and I really selected the best wedding cake I've ever had!  I think this was a key to it lasting.  In a nutshell it was butter cream frosting, white cake, cannoli cream, chocolate cake, bavarian cream, white cake, cream cheese filling, and red velvet.  The chocolate and red velvet, cream, frosting tasted just like on our wedding day.  The white cake tasted slightly lemon-y.  Weird.
