Spicy Vodka Sauce over Shrimp and Whole Wheat Spaghetti

So Mr. Delish came up with this idea the other day since we had extra cherry tomatoes in the apartment and I was thinking of making shrimp.  I'd never heard of shrimp in vodka sauce before but this recipe was perfect.  The man is a genius.   I love the spicy taste of this sauce.  Also, this dish was quick and easy to prepare (once I shelled and deveined my shrimp).  I paired it with steamed broccoli.  My husband told me that this was the best dinner I've ever made.  As for me, it's hard for me to choose a favorite dinner/recipe.  That said, this one is definitely a contender.  

My only caveat is experiment with how much red pepper you want (add a little less than you think you want).  You can always add more.  In a nutshell, I modified this recipe from Spark People by using whole wheat spaghetti instead of whole wheat penne (we didn't have penne) and adding cherry tomatoes.  I also made less of it.  I used la fede vodka sauce instead of bertolli but I'm sure any vodka sauce will work.  I used three jumbo shrimp a person.


-Whole Wheat Spaghetti -1/2 a 16 oz box (cooked according to directions) OR use whole penne
-Cooked Jumbo Shrimp-3 a person. (tails removed)(baked mine for 10-12 min)
-Vodka Sauce-La Fede, 1/2 jar
-Minced Garlic-1/2 Tbsp.
-Crushed Red Pepper, 1/4 to 1/2 tsp or to taste (optional)
-Basil, 1/2  Tbsp
-salt & pepper to taste (optional)

-12-16 Cherry/grape tomatoes  (optional)
-Parmesan cheese (optional)


1. Prepare pasta according to directions.
2. In separate pan, combine shrimp, vodka sauce, garlic, red pepper, basil, salt & pepper. Heat thoroughly.
3. Either serve shrimp mixture over the pasta or mix together. My family enjoyed this mixed together so that the flavors melded.
4. Add cherry tomatoes.
5. Sprinkle with Parmesan cheese.
6. Enjoy!

Yield: 4 servings
