Mild Buffalo and Cheese Quinoa

I've been trying to introduce Mr. Delish to quinoa for ages.  He said it sounded like something he would not like.  Undeterred, I came up with the perfect recipe for him to try. 

I had previously put buffalo sauce on plain quinoa one day to give it a bit of flavor.  However, I knew that wasn't going to do it;it felt like something was missing. So I went to my fridge.  When I looked inside, I realized I had all of the ingredients left from my homemade macaroni and cheese.  Perfect.  Since Mr. Delish loves buffalo flavored foods (tacos, salads, burgers, wings), I thought he might like this one.  Success!  He actually liked this recipe.

I basically altered the macaroni and cheese recipe which I had adapted from Food Judicata (originally taken from the College Kitchen) by using quinoa and adding buffalo sauce.  I also cut down the amount of cheese slightly since the buffalo sauce gives it plenty of flavor and similarly left out the salt & pepper & chili powder.  Note that if you want to try using EVOO the nutty flavor of the quinoa works with EVOO but it seems to stick more than when using butter.

I made this buffalo quinoa fairly mild because I paired it with baked Chipotle jumbo shrimp with roasted tomatoes and onions that was a little spicy.  Normally, I might have paired that with rice or maybe a potato but I really wanted to get Mr. Delish to try quinoa.  It might not be the prettiest recipe but it is definitely tasty. 

Mild Buffalo and Cheese Quinoa

-1/2 cup - 1 cup of quinoa
-2 Tbsp butter (or olive oil but note that it may stick more with the EVOO)
-3 Tbsp of buffalo sauce (or to taste)
 -1/5 cup shredded (low fat) cheddar Cheese
-3 Tbsp (skim) milk)
-1-2 slices of American cheese, broken into pieces
-1 Tbsp Parmesan cheese, optional

1. Prepare your quinoa as usual (aka either bowl for twenty minutes or use my preferred method, the rice cooker).
2. Once your quinoa has been cooked, transfer it to a sauce pan then turn on the heat to medium low.   Add butter, buffalo sauce and shredded cheese.
3. Add your milk slowly one Tbsp at a time, stirring.
4. Add American cheese, stirring so that the ingredients are mixed together.
5. Add Parmesan cheese if desired.
6. Once the ingredients are all mixed together, transfer to serving platter(s) and serve immediately.
7. Enjoy!

Variation: Use 1-2 Tbsp olive oil instead of the butter.
