If you've been following my recent posts you may have noticed that this week I bought two mangoes for purposes of making mango bread but only ended up using one. Also, as noted in my last post in which my husband prepared dinner and dessert, we also had blackberries in my fridge. So I decided to try making a smoothie, which wound up being delicious and filling.
In order to make it really filling, I decided to incorporate Greek yogurt into my recipe (since Greek yogurt has a ton of protein). Conveniently, I had exactly one yogurt in my fridge - a mango Chobani which worked out perfectly. I also added a bit of honey to counteract the tartness of the berries. I've labeled this breakfast and also dessert because it works for either (or for lunch as well). It also took no time to throw together.
I probably shouldn't have taken a sip of my smoothie before photographing (sorry readers), but then again I wasn't sure it was blogworthy until after I tasted it. This smoothie was super-filling and yummy. It has a thicker consistency because of the yogurt and also the blackberries but I love mango, blackberry, and Greek yogurt so I thought it was perfect.
Mango Berry Yogurt Smoothie
-1/2 a mango (approximately one cup), peeled and cut into chunks
-1/2 a carton of blackberries (approximately 1/2 a cup)
-1 Chobani yogurt or other Greek yogurt (As noted, I used mango Chobani)
-1/4 cup skim milk
-1 Tbsp of honey (or to taste), optional
1. Place ingredients in blender.
2. If you are using ice, use your blender's crush ice feature.
3. If your blender has a stir feature, use it to mix together ingredients.
4. Blend the ingredients (I did not use the ice so I just pressed liquify here.
Yield: two small smoothies or one large smoothie
