So today I had an incredible day. At the outset, I went to my cousin-in-law's bridal shower, which was really nice (and even won the centerpiece pictured below because my b-day was the closest to the wedding day). In addition, earlier in the week, knowing that I would be tired, my husband wrote in our menu that he was making dinner. I know he can make pasta and we had lobster ravioli in the freezer (and a good vodka sauce in the fridge), but what I wasn't expecting was a gourmet meal...
I felt exhausted for some reason after the shower so I took a little siesta after I got home. I woke up from a postprandial nap to Mr. Delish in his apron telling me that the first course of dinner was served. I was just expecting to find some ravioli.
Instead, I found this really light and refreshing salad. It was exactly what I needed. Mr. Delish gets special kudos for making this creative salad and dinner since we are admittedly low on supplies (we won't be dining at home much this week so I didn't pick up much in the way of groceries, just some fruit and a couple of vegetables). I especially loved it with the mango dressing which is one of my favorites.
So the salad...
Refreshing Watermelon Salad
-1/2 a bag of bagged lettuce/ salad mix
-1/4 pound watermelon (estimate)
-2 Tbsp blue gorgonzola
-2 Tbsp (a person) mango salad dressing
1. Pour salad/lettuce into serving platters.
2. Chop watermelon into pieces and place in platter with lettuce.
3. Add blue gorgonzola cheese.
4. Add mango salad dressing (or other fruity dressing of your choice)
So after the salad, I went into the kitchen to grab a paper towel when Mr. Delish kicked me out - but not before I spotted a bag of carrots. I asked him what he was doing with them and he yelled, "it's a garnish!!!"

Afterwards, he asked me if I would care for some dessert. My options were a limited fruit and cheese platter or ice cream surprise, which of course was the option I picked.

This whole meal was seriously amazing. I love that my hubby used melted fudgecicle too. He is the best.
Mr. Delish really did just prepare it deliciously =)
