Chocolate Chip Ice Cream Sandwiches


In honor of National Chocolate Chip Cookie Day,  I decided to make chocolate chip cookie ice cream sandwiches filled with chocolate chip ice cream.  An homage to the chocolate chips if you will.

Originally, I got this idea from Hula Cookies in Maui - a place that offers a variety of ice cream and cookie choices for ice cream sandwiches (you can even get one chocolate cookie and one macadamia nut etc).  My hubby and I discovered it right after going to the Maui Ocean Center on the last day of our honeymoon in Hawaii, but I never made it until now. Awesome dessert.   

I should also add that I don't regularly make desserts; a fudge pop or a sugar-free pudding is usual what's on the menu if one of us (usually me) is craving something sweet.  However, this dessert was a nice compliment to a light dinner which was 1/2 a filet each of Parmesan-crusted tilapia, potato, and broccoli rabe.  Plus, let's not forget about National Chocolate Chip Cookie Day.

Ingredients:
- cookies (prepared according to your favorite recipe)
- ice cream

Directions:
1. Bake your favorite cookie recipe(s) according to the directions and let cool slightly (you don't want your cookies to break while putting this together but you also want the cookies to be warm and yummy).
2. Place your favorite ice cream in between two cookies and press them together enough to flatten the ice cream but not break the cookies.
3. Enjoy!
