Fresh String Bean and Cherry Tomato Salad


So this past Sunday my husband and I went to visit my uncle and my parents.  Whenever I see my parents, they always buy me random stuff - it could be clothes or food or both.  This time my parents bought us, among other things, arepas, string beans, cherry tomatoes, zucchini, avocado, and a box of Great Grains cereal.  Since my mom suggested that I make some kind of salad with my vegetables I threw this little salad together.

I've actually never made string beans before now but this was pretty easy; in fact I made the string beans last night and completed the recipe today (another thing that I've been learning about - prepping vegetables in advance).  Sorry if the measurements aren't exact I didn't weigh my string beans (even though I should have).

I served this yummy side dish with parmesan-crusted tilapia and mashed potatoes.

Ingredients:
-string beans (approximately 1/2 pound)
-one package of cherry tomatoes, halved
-2 Tbsp blue cheese crumbles
-4 Tbsp of vinaigrette salad dressing (2 per person - we used Sardini's light Caesar vinaigrette)

Directions:
1. Boil string beans in salted water.  Drain then cut them into smaller pieces.  For best results, put this in the fridge to cool for some time as the salad is meant to be served cold.
2. Cut cherry tomatoes in half (if you haven't already) then mix them into the same bowl as the string beans.
3. Mix blue cheese crumbles in with the salad.
4. Add salad dressing.
5. Serve and enjoy!
